Lesson from the dough

The first time I made cinnamon rolls was in school. I don't like cinnamon rolls but I loved what we just made. Chef Vicki was so patient in teaching and tutok each one of us when kneading breads; hand kneading and dough machine. Lean dough and Sponge dough. Making bread was one of our memorable experience. No air-con. Two noisy and big kneading/dough machines. Since there were no air-con more pawis for us!! But it was all worth it!!! we made breads!!! ugly but delicious breads!!!

As I always say, practice makes perfect. Well, this time, no assistant from the school, no classmates, and of course no Chef Vicki. I red the recipe card. Mis en place, and made sure everything was in front of me. I started mixing all the ingredients; dry, liquid and the fats. At first I know I was on the right track. But I knead the bread too long and still it wasn't elastic enough.. Until I gave up and tried to make another one. AGAIN, I mis en place all the ingredients. When I started to mix again, I noticed I have two sets of salt.... hmmm... then I knew why my first dough didn't reached the stage it supposed to be.

Now, every time I made bread/dough I make sure that I put all the ingredients!!

Baguette!! Baguette!!

We were early today.. and the kitchen is free to use!!!

I took out my recipe card, went in to the kitchen.
Mis en place. Flour. Yeast. Sugar. Water. Salt.
Scaled each ingredient. Mix. AND KNEAD!!
Best exercise!! Haha!! I don't think I need to enroll to any gym for a workout!!

Smooth and elastic.�Fermented.�Scaled.�Shaped.�Rested.�Baked.

My first try in baking Baguette, all by myself.
