Applying for Marriage License @ Caloocan City Hall

Eto siguro un most unexpected day namin... We have a family friend working in Caloocan City hall. Called her days before, kung ano yung mga requirement na kailangan for the license. She replied through text the next day:
Requirements for Marriage Licence..
1. Cedula,
2. Birth Certificate (photocopy will do); and
3. Certificate of attendance to the Family Planning/Marriage Seminar.

First thing we did was to acquire cedula... and NO pila at all!!! Got our cedula agad!! Tinanong lang ng cashier kung ano ang purpose ng pagkuha ng cedula, hiningan kami ng P20, (P10/each) then, un na!!! may cedula na kami... (nakapagtataka lang un nakalagay sa cedula we paid P6 total amount)

Next, Fill up the Application form for Marriage License sa Civil Registry Department (CRD).. again NO PILA!! Filled up the form twice pa nga (while H2b photocopied our cedula), dahil mali un nasulat ko sa mother's name.. hindi daw kasi pareho na nakalagay sa birth certificate, hehe.. dapat pala Mother's Maiden Name.

They scheduled us for the seminar. (Family planning Seminar is every MWF after lunch.)

Our license will be ready after 10 days.

Wala pang isang oras!!! Di pa namin kailangan mag-leave sa work.

Cream Puff Experience

After my Pate a Choux make up class, I included cream puff in our menu. I not fond of cream puff. The puff dough doesn't have sweet taste, it's bland, actually. My first impression of cream puff, difficult to made. Pero hindi pala. I like the crisp crust of the dough. Sweet custard cream inside.


I made a little Croquembouche, tower of cream puff, although I want to try to make the real one; cone-shaped na parang Christmas tree... made this with toffee sauce and chocolate sauce.. decorated with caramel strands.

Croquembouche is a traditional french wedding cake; was made for happy occasions. wherein people enjoy eating this tower of cream puffs together. Something I also like to have/make for Christmas with different flavors of custard to fill in the puff dough..
hmmm... Christmas Project!!! Sino ba may plan ng Christmas party? hehe...

Vhiea's Brownie ala Monde

Destress time!!! Chocolates!!!!!
Not just Chocolates, Chocolate FUDGE brownies!!!!

Everyone is on their break, while I sneak into the kitchen. Found the brownies I baked. Mini colorful mallows! mini white chocolates!! Over flowing chocolate syrup! and of course, ICE CREAM!!! Strawberry!!!


Here at my Ahya's resto, I baked the brownies using cupcake molds! why?? easier to serve! no mess!! No need to slice, clean and nice... and equal serving size!
I Love Chocolates!! I love baking!!! I love Myself!!

Lesson from the dough

The first time I made cinnamon rolls was in school. I don't like cinnamon rolls but I loved what we just made. Chef Vicki was so patient in teaching and tutok each one of us when kneading breads; hand kneading and dough machine. Lean dough and Sponge dough. Making bread was one of our memorable experience. No air-con. Two noisy and big kneading/dough machines. Since there were no air-con more pawis for us!! But it was all worth it!!! we made breads!!! ugly but delicious breads!!!

As I always say, practice makes perfect. Well, this time, no assistant from the school, no classmates, and of course no Chef Vicki. I red the recipe card. Mis en place, and made sure everything was in front of me. I started mixing all the ingredients; dry, liquid and the fats. At first I know I was on the right track. But I knead the bread too long and still it wasn't elastic enough.. Until I gave up and tried to make another one. AGAIN, I mis en place all the ingredients. When I started to mix again, I noticed I have two sets of salt.... hmmm... then I knew why my first dough didn't reached the stage it supposed to be.

Now, every time I made bread/dough I make sure that I put all the ingredients!!

Baguette!! Baguette!!

We were early today.. and the kitchen is free to use!!!

I took out my recipe card, went in to the kitchen.
Mis en place. Flour. Yeast. Sugar. Water. Salt.
Scaled each ingredient. Mix. AND KNEAD!!
Best exercise!! Haha!! I don't think I need to enroll to any gym for a workout!!

Smooth and elastic.�Fermented.�Scaled.�Shaped.�Rested.�Baked.

My first try in baking Baguette, all by myself.

Strawberry Mille Crepe

I want to make sweeeets noong isang araw pa.. hanggang panaginip gumagawa ako ng desserts, hindi na carry kaya eto na....

I saw this dessert in an anime, first episode of Yumeiro Patissiere. Since then, I also wanted to make one. Like the bida, I had no good experience in making/cooking crepe. Hindi ko naman nasusunog.. hindi lang nabubuo.

So here goes, the first crepe.. disaster!!! the second, better!! although yung iba may butas or may konting punit sa gilid. hehe... bUT!! practice makes perfect!!! Used chopstick to turned/flipped the crepe easily.

Custard, I made Creme Anglaise with more eggyolk.. I wanted my custard thicker and richer. Since the crepe wasn't sweet.. sakto lang un sweetness ng custard sa crepe plus it compliment the strawberries. Haha!! kinakain ko na nga un strawberries deep in custard.

Layering.. Crepe + custard + sliced strawberries + crepe + custard.......

I'm supposed to topped it pa ng whipped cream, but sadly, I'm still not an expert in whipping cream.

Sweetness!!! First impression ng mga kapatid ko "wow!!" at walang gustong kumain, ayaw nilang galawin. haha!!!
